Organic Cheese Lasagna
Complete this meal with your favorite tossed salad and crusty Italian bread.
Ingredients:
1 1/2 pounds organic ricotta cheese
2 organic eggs, beaten
3 tablespoons chopped fresh organic parsley
1/8 teaspoon organic ground nutmeg
2 jars (25.5 ounces each) Muir Glen organic pasta sauce, any flavor
12 extra-wide organic lasagna noodles, cooked according to package directions, drained, rinsed and patted dry
2 cups shredded organic mozzarella cheese (8 ounces)
Heat oven to 375°. Stir together ricotta, eggs, parsley and nutmeg; mix well. Spread 1 cup pasta sauce in bottom of rectangular baking dish, 9 x 13 x 2 inches. Arrange 4 noodles over sauce, overlapping slightly. Spread with half of the ricotta mixture. Spoon and spread 1 1/2 cups sauce over ricotta; sprinkle with 1 cup mozzarella. Repeat layers, ending with layer of noodles and remaining sauce. Bake 35 minutes or until heated through and cheese is melted. Let stand 5 minutes before serving.
